Abstract

Islam which requires its followers to Consume halal food and drinks. The use of basic materials derived from one of the prohibited materials or the processing process is not appropriate is a problem in this case. Gelatin, which is produced from the raw material of pig skin, which is widely produced today, poses a problem for adherents of Islam because it is related to its halal status. To meet the demand for gelatin, until now Indonesia is still importing gelatin from several countries. Therefore, the use of halal raw materials that are widely available in the country is a solution to be able to produce halal gelatin with characteristics that meet standards. This provides an opportunity to produce safe and halal gelatin such as goat skin which is a by-product of cutting which is mostly used as raw material for the leather tanning industry. The results showed that gelatin from Etawa goat skin and was produced through acid and alkaline processes showed characteristics that were not much different. The resulting gelatin has characteristics that meet the standards. The production of gelatin from the skin of the Etawa goat could become a raw material for making halal gelatin.
